
In honor of my youngest daughter’s first day of preschool today, I have a super duper exciting back-to-school giveaway for y’all! Leah is 3 1/2, and she could not be more excited about going to school. Although it is just two days a week, she feels like a big girl, just like Sara.

I just saw a neat recipe that looks like it would be healthy and could be fun to make. Mix 1/4 cup of healthy peanut butter with 1 Tbsp of honey, set aside. Core an apple and slice into thick slices and put in a bowl of ice water with 1 tsp of lemon juice to keep from browning. Pat dry the slices and spread the peanut butter mixture on one side of a slice and sprinkle with dried cranberries (I think you could use raision too if you would like) then top with another apple slice. Let your daughter help with any of those steps you think she could handle.
To keep lunches fun, I often cut my son’s sandwiches into fun shapes with cookie cutters. He loves dipping, so we experiment with that. Yogurt or cream cheese dips for fruit, something more savory for veggies, etc. He also likes it when we make a rainbow of food, a great way to get extra fruits and veggies in.
