Easy Corn Casserole

Casseroles are the ultimate comfort food. They are also incredibly frugal, freeze well, and can be a clever way to sneak some veggies into a meal. This quick and easy Corn Casserole dish is a crowd pleaser.

I served it recently along with some Turkey Sausage and Black Bean Soup – a perfect pair! It would also go well with Taco Night at our house.

Corn Casserole

1 box jiffy cornbread mix
1 can creamed corn
1 can whole corn, drained
1/2 cup oil (or applesauce for a healthier twist)
3/4 cup milk
2 eggs, lightly beaten
dash of salt

Preheat oven to 350. Dump all ingredients into a medium bowl and mix well. Pour into a 9 x 13 baking dish or 1 1/2 quart casserole. Bake approximately 45 minutes until golden brown.

The consistency is similar to a moist cake, with a hint of sweetness. Serve immediately or freeze for later. Enjoy!

I have been making traditional baked corn for many years but this looks like a good alternative. Fewer ingredients and calories I’m sure. Thanks for sharing.

My family loves this receipe. If it’s not on the table at Christmas or Thanksgiving, I hear about it. My receipe calls for butter and sour cream instead of milk and oil. The kids LOVE it. It’s also good with green chile for a spicy alternative.

I have made a similar recipe for many years.1 stick butter melted,1 8oz cup of sour cream,1 can whole kernel corn,1 can cream style corn,2 eggs and 1 box of Jiffy corn muffin mix. My relatives think this has to be on the table at every holiday get together.

I make something very similar and my husband loves it. To add some additional taste and protein, I often take a can of black beans and simmer them with some salsa for just a few minutes as a topping for the cornbread. Yummy!

I make this all the time!! Its so yummy..I add a twist to mine..during the last 5 minute of baking, sprinkle chedder cheese on top!!!

We make a very similar recipe, but instead of oil and milk, we add butter and sour cream! It’s a family favorite and a staple for holidays!

Mmmm..this looks awesome and I think even my fussy 5 year old would eat this since it had corn (one of the few veggies he still eats).
